Bamboo Chicken (ayam Pansoh)
Bamboo Chicken, also known as Ayam Pansoh, is a traditional dish from Sarawakian Cuisine. This dish is prepared by cooking chicken with lemongrass, ginger, and other aromatic ingredients inside a bamboo tube, resulting in a unique and flavorful dish.
Ingredients
- 1 whole chicken, cut into pieces
- 4 stalks lemongrass, smashed
- 4 slices ginger
- 4 shallots, sliced
- 4 cloves garlic, minced
- 4 red chilies, sliced
- 1 cup water
- Salt to taste
Instructions
- Prepare the bamboo tube by cutting it into 8-inch sections and cleaning the insides.
- Place the chicken pieces, lemongrass, ginger, shallots, garlic, and red chilies inside the bamboo tube.
- Add water and salt to the bamboo tube.
- Seal the bamboo tube with banana leaves and secure with toothpicks.
- Cook the bamboo tube over a stovetop for 1 hour.
- Once cooked, carefully open the bamboo tube and transfer the chicken and aromatic ingredients to a serving dish.
