Bamboo Chicken, also known as Ayam Pansoh, is a traditional dish from Sarawakian Cuisine. This dish is prepared by cooking chicken with lemongrass, ginger, and other aromatic ingredients inside a bamboo tube, resulting in a unique and flavorful dish.

Ingredients

  • 1 whole chicken, cut into pieces
  • 4 stalks lemongrass, smashed
  • 4 slices ginger
  • 4 shallots, sliced
  • 4 cloves garlic, minced
  • 4 red chilies, sliced
  • 1 cup water
  • Salt to taste

Instructions

  1. Prepare the bamboo tube by cutting it into 8-inch sections and cleaning the insides.
  2. Place the chicken pieces, lemongrass, ginger, shallots, garlic, and red chilies inside the bamboo tube.
  3. Add water and salt to the bamboo tube.
  4. Seal the bamboo tube with banana leaves and secure with toothpicks.
  5. Cook the bamboo tube over a stovetop for 1 hour.
  6. Once cooked, carefully open the bamboo tube and transfer the chicken and aromatic ingredients to a serving dish.
