Bamboo Chicken Soup, also known as Manok Pansuh, is a traditional dish from the Sarawakian Cuisine. This unique soup is cooked inside a bamboo stalk, giving it a distinct flavor and aroma.

Ingredients

  • 1 whole chicken, cut into pieces
  • 1 stalk lemongrass, smashed
  • 4 shallots, sliced
  • 4 garlic cloves, minced
  • 4 red chilies, sliced
  • 1 inch ginger, sliced
  • 4 cups water
  • Salt to taste

Instructions

  1. Prepare the bamboo stalk by cutting it into 8-inch sections and cleaning the insides.
  2. Combine the chicken, lemongrass, shallots, garlic, chilies, and ginger inside the bamboo sections.
  3. Pour water into the bamboo sections, then seal the openings with banana leaves and secure with toothpicks.
  4. Cook the bamboo sections over medium heat for 1 hour.
  5. Carefully open the bamboo sections, transfer the soup to a serving bowl, and season with salt.
