Ingredients

  • 250g bamboo shoot, thinly sliced
  • 200g smoked fish, flaked
  • 3 medium potatoes, peeled and sliced
  • 2 onions, thinly sliced
  • 3-4 green chilies, sliced
  • 1 tsp ginger, grated
  • 1 tsp garlic, minced
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tbsp mustard oil
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add the sliced potatoes and fry until they are golden brown. Remove and set aside.
  3. In the same pan, add the sliced onions, green chilies, ginger, and garlic. Sauté until the onions are translucent.
  4. Add the bamboo shoot and cook for 5-7 minutes until they are tender.
  5. Stir in the flaked smoked fish, turmeric powder, red chili powder, and salt. Cook for another 5 minutes.
  6. Add the fried potatoes to the pan and mix well with the bamboo shoot and fish.
  7. Cook for an additional 3-4 minutes, allowing the flavors to meld together.
  8. Remove from heat and serve hot.
