Bamboosa Bhaja (naga Style Bamboo Shoot Stir-fry)

Ingredients

  • 500g bamboo shoots, thinly sliced
  • 2 tbsp mustard oil
  • 1 onion, thinly sliced
  • 2-3 green chilies, sliced
  • 1 tsp turmeric powder
  • Salt to taste

Instructions

  1. Heat mustard oil in a pan over medium heat.
  2. Add sliced onions and green chilies, and sauté until the onions turn translucent.
  3. Add the thinly sliced bamboo shoots, turmeric powder, and salt. Stir well to combine.
  4. Cook for 15-20 minutes, stirring occasionally, until the bamboo shoots are tender and cooked through.
  5. Remove from heat and serve hot as a side dish with steamed rice.
