Ingredients

  • 400g egg noodles
  • 2 tbsp vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 2 carrots, julienned
  • 200g chicken breast, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp sweet soy sauce (kecap manis)
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 4 eggs, lightly beaten
  • 4 green onions, chopped

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and garlic, and sauté until fragrant.
  3. Add the sliced red bell pepper, julienned carrots, and sliced chicken breast to the pan. Cook until the chicken is no longer pink.
  4. Stir in the soy sauce, sweet soy sauce, ground cumin, chili powder, salt, and pepper. Mix well.
  5. Push the chicken and vegetable mixture to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  6. Add the cooked egg noodles to the pan and toss everything together until well combined.
  7. Garnish with chopped green onions before serving.
