Ingredients

  • 1 1/2 lbs lamb, cut into chunks
  • 1 lb fresh okra, trimmed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
  2. Add the chopped onion to the pot and sauté until softened. Add the minced garlic and cook for another minute.
  3. Stir in the tomato paste, paprika, cumin, and cinnamon, and cook for 2 minutes.
  4. Return the browned lamb to the pot, then add the diced tomatoes and chicken or beef broth. Season with salt and pepper, then bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 1 hour.
  6. Add the trimmed okra to the pot and continue to simmer for another 30-45 minutes, or until the lamb is tender and the okra is cooked through.
  7. Adjust the seasoning if needed, then serve the Bamia hot with rice or bread.
