Bamia (assyrian Lamb And Okra Stew)
Bamia is a traditional Assyrian stew that combines tender lamb with flavorful okra in a rich tomato-based sauce. This hearty dish is perfect for a comforting family meal or a special occasion.
Ingredients
- 1 1/2 lbs lamb, cut into chunks
- 1 lb fresh okra, trimmed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Add the chopped onion to the pot and sauté until softened. Add the minced garlic and cook for another minute.
- Stir in the tomato paste, paprika, cumin, and cinnamon, and cook for 2 minutes.
- Return the browned lamb to the pot, then add the diced tomatoes and chicken or beef broth. Season with salt and pepper, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour.
- Add the trimmed okra to the pot and continue to simmer for another 30-45 minutes, or until the lamb is tender and the okra is cooked through.
- Adjust the seasoning if needed, then serve the Bamia hot with rice or bread.
