Ingredients
- 1 pound fresh okra, washed and trimmed
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 4 ripe tomatoes, diced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups vegetable broth
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
- Add the diced tomatoes, ground coriander, ground cumin, paprika, salt, and pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Add the fresh okra to the pot and pour in the vegetable broth. Bring the stew to a gentle boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the okra is tender.
- Once the stew is ready, adjust the seasoning if needed. Serve the Bamia Bil Zeit hot, garnished with fresh parsley.
