Ingredients

  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups vegetable broth
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are soft and fragrant.
  2. Add the diced tomatoes, ground coriander, ground cumin, paprika, salt, and pepper to the pot. Cook for 5 minutes, stirring occasionally.
  3. Add the fresh okra to the pot and pour in the vegetable broth. Bring the stew to a gentle boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the okra is tender.
