Bamia is a traditional Iraqi stew made with chickpeas and spinach, flavored with a blend of aromatic spices. This hearty and nutritious dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 4 cups fresh spinach, chopped
- 2 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Stir in the chopped spinach and cook until wilted.
- Add the cooked chickpeas and vegetable broth. Season with salt and pepper to taste.
- Simmer the stew for 30-40 minutes, stirring occasionally, until the flavors have melded together.
- Serve the bamia hot, garnished with a sprinkle of fresh cilantro or parsley.
