Ingredients

  • 1 lb fresh okra, trimmed and sliced
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the garlic, ginger, turmeric, paprika, and cayenne pepper, and cook for another 2 minutes.
  4. Add the sliced okra and diced tomatoes to the pot, and stir to combine with the spices.
  5. Pour in the vegetable broth and season with salt and pepper.
  6. Bring the stew to a simmer, then reduce the heat and let it cook for 20-25 minutes, or until the okra is tender.
  7. Adjust the seasoning if needed, and serve the Bamia hot with your choice of side dish.
