Ingredients
- 1 lb fresh okra, trimmed and sliced
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 2 cups vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the garlic, ginger, turmeric, paprika, and cayenne pepper, and cook for another 2 minutes.
- Add the sliced okra and diced tomatoes to the pot, and stir to combine with the spices.
- Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a simmer, then reduce the heat and let it cook for 20-25 minutes, or until the okra is tender.
- Adjust the seasoning if needed, and serve the Bamia hot with your choice of side dish.
