Ingredients

  • 2 cups long-grain white rice
  • 1 pound okra, sliced
  • 1 onion, finely chopped
  • 3 tomatoes, chopped
  • 3 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
  2. Add the sliced okra and cook for a few minutes until it starts to soften.
  3. Stir in the chopped tomatoes, tomato paste, paprika, cumin, and coriander. Cook for about 5 minutes, stirring occasionally.
  4. Add the rice to the pot and stir to combine with the vegetable mixture.
  5. Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the rice with a fork and serve hot.
