Bamia (juba Jollof Rice)
Bamia, also known as Juba Jollof Rice, is a popular dish in South Sudanese cuisine. This flavorful and aromatic rice dish is a staple in many households and is perfect for sharing with family and friends.
Ingredients
- 2 cups long-grain white rice
- 1 pound okra, sliced
- 1 onion, finely chopped
- 3 tomatoes, chopped
- 3 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and cook until they are soft and translucent.
- Add the sliced okra and cook for a few minutes until it starts to soften.
- Stir in the chopped tomatoes, tomato paste, paprika, cumin, and coriander. Cook for about 5 minutes, stirring occasionally.
- Add the rice to the pot and stir to combine with the vegetable mixture.
- Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
