Ingredients

  • 1 lb lamb, cut into cubes
  • 1 lb fresh okra, trimmed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the diced tomatoes, tomato paste, turmeric, cumin, and paprika. Cook for a few minutes to allow the flavors to meld.
  4. Add the trimmed okra to the pot and pour in the chicken or beef broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the lamb is tender and the okra is cooked through.
  6. Adjust the seasoning if needed and serve the Bamia hot with rice or crusty bread.
