Bamia (lamb And Okra Stew)
Bamia is a traditional Libyan stew made with tender lamb and flavorful okra. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 lb lamb, cut into cubes
- 1 lb fresh okra, trimmed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp paprika
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Stir in the diced tomatoes, tomato paste, turmeric, cumin, and paprika. Cook for a few minutes to allow the flavors to meld.
- Add the trimmed okra to the pot and pour in the chicken or beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the lamb is tender and the okra is cooked through.
- Adjust the seasoning if needed and serve the Bamia hot with rice or crusty bread.
