Ingredients

  • 1 lb lamb, cut into cubes
  • 1 lb fresh okra, trimmed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the diced tomatoes, tomato paste, ground coriander, ground cumin, and paprika. Cook for a few minutes to combine the flavors.
  4. Add the trimmed okra to the pot and pour in the chicken or beef broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1 hour, or until the lamb is tender and the okra is cooked through.
  6. Adjust the seasoning if needed, then serve the Bamia hot with rice or bread.
