Ingredients

  • 1 lb okra, chopped
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and garlic, and sauté until the onions are translucent.
  3. Add the chopped okra and diced tomatoes to the pot, and cook for 5 minutes.
  4. Stir in the ground coriander, cumin, cayenne pepper, salt, and pepper.
  5. Pour in the vegetable broth, and bring the stew to a simmer.
  6. Cover the pot and let the stew cook for 45 minutes, stirring occasionally.
  7. Once the okra is tender, adjust the seasoning if needed, and serve the bamia hot.
