Bamia (sudanese Okra Stew)
Bamia is a traditional Sudanese okra stew that is flavorful and comforting. This dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 lb okra, chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 2 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions and garlic, and sauté until the onions are translucent.
- Add the chopped okra and diced tomatoes to the pot, and cook for 5 minutes.
- Stir in the ground coriander, cumin, cayenne pepper, salt, and pepper.
- Pour in the vegetable broth, and bring the stew to a simmer.
- Cover the pot and let the stew cook for 45 minutes, stirring occasionally.
- Once the okra is tender, adjust the seasoning if needed, and serve the bamia hot.
