Ingredients

  • 1 lb beef, cut into cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup tomato sauce
  • 1 cup water
  • 1 lb fresh okra, trimmed and halved
  • 2 tbsp vegetable oil
  • 2 tbsp chopped fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef cubes to the pot and cook until browned on all sides.
  3. Stir in the ground cumin, ground coriander, turmeric, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  4. Pour in the tomato sauce and water, then bring the mixture to a simmer. Cover and cook for 30 minutes.
  5. Add the okra to the pot and continue to simmer, uncovered, for an additional 20-25 minutes until the okra is tender.
  6. Adjust seasoning if needed, then garnish with chopped cilantro before serving.
