Bamia (sudanese Spiced Beef And Okra Curry)
Bamia is a popular Sudanese dish featuring spiced beef and okra in a flavorful curry sauce. This hearty and aromatic dish is perfect served over a bed of steamed rice.
Ingredients
- 1 lb beef, cut into cubes
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup tomato sauce
- 1 cup water
- 1 lb fresh okra, trimmed and halved
- 2 tbsp vegetable oil
- 2 tbsp chopped fresh cilantro, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef cubes to the pot and cook until browned on all sides.
- Stir in the ground cumin, ground coriander, turmeric, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes until fragrant.
- Pour in the tomato sauce and water, then bring the mixture to a simmer. Cover and cook for 30 minutes.
- Add the okra to the pot and continue to simmer, uncovered, for an additional 20-25 minutes until the okra is tender.
- Adjust seasoning if needed, then garnish with chopped cilantro before serving.
