Bamia (sudanese Spiced Chicken And Okra Stew)
Bamia is a flavorful Sudanese spiced chicken and okra stew that is perfect for a comforting and hearty meal. This dish is packed with aromatic spices and tender chicken, creating a delicious and satisfying stew.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 lb okra, trimmed and halved
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 2 tomatoes, chopped
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Season the chicken pieces with salt, pepper, and turmeric.
- Heat olive oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground coriander, cumin, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the chopped tomatoes and cook for 5 minutes, stirring occasionally.
- Return the browned chicken to the pot. Pour in the chicken broth and bring to a simmer. Cover and cook for 30 minutes.
- Add the halved okra to the pot and continue to simmer for an additional 20 minutes, or until the okra is tender.
- Adjust seasoning with salt and pepper, if needed. Serve the Bamia hot with rice or bread.
