Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 lb okra, trimmed and halved
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 2 tomatoes, chopped
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken pieces with salt, pepper, and turmeric.
  2. Heat olive oil in a large pot over medium heat. Add the seasoned chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground coriander, cumin, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Add the chopped tomatoes and cook for 5 minutes, stirring occasionally.
  5. Return the browned chicken to the pot. Pour in the chicken broth and bring to a simmer. Cover and cook for 30 minutes.
  6. Add the halved okra to the pot and continue to simmer for an additional 20 minutes, or until the okra is tender.
  7. Adjust seasoning with salt and pepper, if needed. Serve the Bamia hot with rice or bread.
