Bamia (sudanese Spiced Lamb And Okra Stew)

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 lb okra, trimmed and sliced
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season the lamb chunks with salt and pepper.
  2. Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
  3. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  4. Return the browned lamb to the pot. Add the sliced okra, diced tomatoes, and broth. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the lamb is tender.
  5. Season with salt and pepper to taste. Serve the Bamia hot with rice or bread.
