Bamia (sudanese Spiced Lamb And Okra Stew)
Bamia is a traditional Sudanese stew made with spiced lamb and okra. This hearty and flavorful dish is perfect for a comforting meal, especially during the colder months.
Ingredients
- 1 lb lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 lb okra, trimmed and sliced
- 1 can (14 oz) diced tomatoes
- 2 cups beef or vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Season the lamb chunks with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the browned lamb to the pot. Add the sliced okra, diced tomatoes, and broth. Bring the stew to a simmer, then reduce the heat to low. Cover and cook for 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste. Serve the Bamia hot with rice or bread.
