Ingredients

  • 1 lb chicken, cut into pieces
  • 1 lb okra, trimmed and sliced
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp berbere spice mix
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  3. Add the chicken pieces and berbere spice mix, and cook until the chicken is browned on all sides.
  4. Stir in the tomatoes and chicken broth, and bring the mixture to a simmer.
  5. Add the okra, cover the pot, and let the stew simmer for 45 minutes, or until the chicken is cooked through and the okra is tender.
  6. Season with salt and pepper to taste.
  7. Serve the Bamia Wat hot over rice or with injera.
