Ingredients

  • 1 lb lamb, cut into cubes
  • 1 lb fresh okra, trimmed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the lamb cubes to the pot and brown on all sides.
  3. Stir in the minced garlic, diced tomatoes, tomato paste, cumin, paprika, cinnamon, salt, and pepper. Cook for a few minutes until fragrant.
  4. Pour in the broth and bring the stew to a simmer. Cover and cook for 30 minutes.
  5. Add the trimmed okra to the pot and continue to simmer for an additional 20-30 minutes, or until the lamb is tender and the okra is cooked through.
  6. Adjust the seasoning if needed and serve the Bamieh Bil Lahmeh hot, accompanied by rice or pita bread.
