Ingredients
- 1 lb lamb, cut into cubes
- 1 lb okra, trimmed and halved
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon cinnamon
- 4 cups chicken or beef broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
- Stir in the diced tomatoes, tomato paste, ground coriander, ground cumin, and cinnamon. Cook for 2-3 minutes.
- Add the okra to the pot and pour in the chicken or beef broth. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the okra is cooked through.
