Ingredients

  • 1 lb lamb, cut into cubes
  • 1 lb okra, trimmed and halved
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. Stir in the diced tomatoes, tomato paste, ground coriander, ground cumin, and cinnamon. Cook for 2-3 minutes.
  4. Add the okra to the pot and pour in the chicken or beef broth. Season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the lamb is tender and the okra is cooked through.
