Bamya is a traditional Assyrian stew made with chickpeas and spinach, cooked in a flavorful tomato-based broth. This hearty and nutritious dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups cooked chickpeas
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 4 cups fresh spinach
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups vegetable broth
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, cumin, paprika, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes and vegetable broth. Bring to a simmer.
- Add the cooked chickpeas and simmer for 20 minutes.
- Stir in the fresh spinach and cook until wilted.
- Season with salt and pepper to taste.
- Serve the Bamya hot, garnished with a sprinkle of cumin and a drizzle of olive oil.
