Ingredients
- 1 lb lamb, cut into cubes
- 1 lb fresh okra, trimmed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 3 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes to allow the flavors to meld.
- Pour in the chicken or vegetable broth and bring the stew to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
- Add the trimmed okra to the pot and continue to simmer for an additional 15 minutes, or until the okra is cooked through.
- Season the stew with salt and pepper to taste. Garnish with fresh parsley before serving.
