Ingredients

  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 3 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft and translucent.
  3. Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes to allow the flavors to meld.
  4. Pour in the chicken or vegetable broth and bring the stew to a simmer. Cover and cook for 45 minutes, or until the lamb is tender.
  5. Add the trimmed okra to the pot and continue to simmer for an additional 15 minutes, or until the okra is cooked through.
  6. Season the stew with salt and pepper to taste. Garnish with fresh parsley before serving.
