Ingredients

  • 1 lb lamb, cut into chunks
  • 1 lb fresh okra, trimmed and halved
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 3 cups chicken or lamb broth
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides.
  2. Add the chopped onions and minced garlic to the pot. Cook until the onions are soft and translucent.
  3. Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes to allow the flavors to meld.
  4. Pour in the broth and bring the stew to a simmer. Cover the pot and let it cook for 1 hour, stirring occasionally.
  5. Add the halved okra to the pot and continue to simmer for another 30-45 minutes, or until the lamb is tender and the okra is cooked through.
  6. Season with salt and pepper to taste. Serve the Bamya hot with rice or bread.
