Bamya (okra And Lamb Stew)
Bamya, also known as Okra and Lamb Stew, is a traditional Mauritanian dish that is hearty, flavorful, and perfect for a cozy family meal. This stew is made with tender lamb, okra, and a blend of aromatic spices, creating a rich and satisfying dish.
Ingredients
- 1 lb lamb, cut into chunks
- 1 lb fresh okra, trimmed and halved
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 3 cups chicken or lamb broth
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides.
- Add the chopped onions and minced garlic to the pot. Cook until the onions are soft and translucent.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes to allow the flavors to meld.
- Pour in the broth and bring the stew to a simmer. Cover the pot and let it cook for 1 hour, stirring occasionally.
- Add the halved okra to the pot and continue to simmer for another 30-45 minutes, or until the lamb is tender and the okra is cooked through.
- Season with salt and pepper to taste. Serve the Bamya hot with rice or bread.
