Ingredients

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 pandan leaf, tied in a knot
  • 4 banana leaves, cleaned and cut into squares
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 1 cup fried anchovies
  • 1 cup roasted peanuts
  • 1 cup sambal (spicy chili paste)

Instructions

  1. Rinse the jasmine rice until the water runs clear. Drain the rice.
  2. In a pot, combine the rinsed rice, coconut milk, pandan leaf, and 1 ½ cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  3. While the rice is cooking, prepare the banana leaves by briefly passing them over an open flame to soften them.
  4. Place a portion of the coconut rice in the center of each banana leaf square. Arrange the hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal on the side.
  5. Wrap the banana leaves into a neat parcel and serve the Banana Leaf Rice immediately.
