Ingredients
- 2 cups jasmine rice
- 1 cup coconut milk
- 1 pandan leaf, tied in a knot
- 4 banana leaves, cleaned and cut into squares
- 4 hard-boiled eggs, halved

- 1 cup fried anchovies
- 1 cup roasted peanuts
- 1 cup sambal (spicy chili paste)
Instructions
- Rinse the jasmine rice until the water runs clear. Drain the rice.
- In a pot, combine the rinsed rice, coconut milk, pandan leaf, and 1 ½ cups of water. Bring to a boil, then reduce the heat to low and simmer, covered, for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the banana leaves by briefly passing them over an open flame to soften them.
- Place a portion of the coconut rice in the center of each banana leaf square. Arrange the hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal on the side.
- Wrap the banana leaves into a neat parcel and serve the Banana Leaf Rice immediately.
