Banana Pudding Without Bananas

Ingredients
- 1 package vanilla wafers
- 1/2 cup sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups almond milk
- 2 tablespoons vegan butter
- 1 teaspoon vanilla extract
Instructions
- In a saucepan, combine the sugar, flour, and salt.
- Gradually stir in the almond milk.
- Cook and stir over medium heat until thickened and bubbly.
- Reduce the heat and cook and stir for 2 minutes longer.
- Remove from the heat and stir in the vegan butter and vanilla extract until the butter is melted.
- In a 2-quart dish, layer the vanilla wafers and the pudding mixture, ending with the pudding on top.
- Let it cool and then refrigerate for at least 4 hours before serving.
