Banga Jollof Rice Delight
Banga Jollof Rice Delight is a popular and flavorful dish from Niger Cuisine that combines the rich flavors of Banga soup with the beloved Jollof rice.
Ingredients
- 2 cups of parboiled rice
- 1 cup of Banga soup
- 1 onion, chopped
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 scotch bonnet pepper, chopped
- 1/2 cup of vegetable oil
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- Salt to taste
Instructions
- Heat the vegetable oil in a pot and sauté the onions until translucent.
- Add the tomatoes, bell pepper, and scotch bonnet pepper. Cook until the vegetables are soft.
- Stir in the Banga soup, thyme, curry powder, and salt. Let it simmer for 5 minutes.
- Add the parboiled rice to the pot and stir to combine with the sauce.
- Cover the pot and let the rice cook for 25-30 minutes until it's tender and has absorbed the flavors.
- Fluff the rice with a fork and serve hot.
