Ingredients

  • 2 cups of parboiled rice
  • 1 cup of Banga soup
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 1 scotch bonnet pepper, chopped
  • 1/2 cup of vegetable oil
  • 1 teaspoon of thyme
  • 1 teaspoon of curry powder
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a pot and sauté the onions until translucent.
  2. Add the tomatoes, bell pepper, and scotch bonnet pepper. Cook until the vegetables are soft.
  3. Stir in the Banga soup, thyme, curry powder, and salt. Let it simmer for 5 minutes.
  4. Add the parboiled rice to the pot and stir to combine with the sauce.
  5. Cover the pot and let the rice cook for 25-30 minutes until it's tender and has absorbed the flavors.
  6. Fluff the rice with a fork and serve hot.
