Banh Bot Loc
Banh bot loc is a traditional Vietnamese dish made with translucent dumplings filled with shrimp and pork. These chewy and flavorful dumplings are a popular snack or appetizer in Vietnamese cuisine.
Ingredients
- 1 lb tapioca starch
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb ground pork
- 1 shallot, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup vegetable oil
- 1/4 cup green onions, thinly sliced
- 1/4 cup fried shallots
- 1/4 cup fish sauce
- 1/4 cup sugar
- 1/4 cup water
- 1/4 cup vinegar
Instructions
- In a bowl, mix the tapioca starch with 1 1/2 cups of warm water to form a dough.
- Divide the dough into small balls and flatten them into circles.
- Place a small amount of the shrimp and pork filling in the center of each circle.
- Fold the dough over the filling and seal the edges to form dumplings.
- Boil the dumplings in a pot of water for 5-7 minutes or until they float to the surface.
- Remove the dumplings and drain them well.
- In a pan, heat the vegetable oil and fry the green onions and fried shallots until crispy.
- In a separate saucepan, combine the fish sauce, sugar, water, and vinegar to make the dipping sauce.
- Serve the banh bot loc with the dipping sauce and garnish with the crispy green onions and shallots.
