Banh Bot Loc

Ingredients

  • 1 lb tapioca starch
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb ground pork
  • 1 shallot, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup fried shallots
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 1/4 cup water
  • 1/4 cup vinegar

Instructions

  1. In a bowl, mix the tapioca starch with 1 1/2 cups of warm water to form a dough.
  2. Divide the dough into small balls and flatten them into circles.
  3. Place a small amount of the shrimp and pork filling in the center of each circle.
  4. Fold the dough over the filling and seal the edges to form dumplings.
  5. Boil the dumplings in a pot of water for 5-7 minutes or until they float to the surface.
  6. Remove the dumplings and drain them well.
  7. In a pan, heat the vegetable oil and fry the green onions and fried shallots until crispy.
  8. In a separate saucepan, combine the fish sauce, sugar, water, and vinegar to make the dipping sauce.
  9. Serve the banh bot loc with the dipping sauce and garnish with the crispy green onions and shallots.
