Ingredients
- 1 cup rice flour

- 1 cup bean sprouts
- Fresh herbs (such as mint, cilantro, and perilla)

- Dipping sauce (nuoc cham)
Instructions
- In a mixing bowl, whisk together the rice flour, coconut milk, turmeric powder, and 1 cup of water to make the batter.
- Heat a banh khot pan over medium heat and brush with oil.
- Place a shrimp in each mold, then add a spoonful of the batter, followed by a few mung beans and bean sprouts.
- Cover and cook for 3-4 minutes until the edges are crispy and golden brown.
- Remove the banh khot from the pan and serve with fresh herbs, lettuce, and dipping sauce.
