Ingredients
- 4 mini baguettes
- 1/2 cup mayonnaise
- 1 pound pork belly, thinly sliced
- 1/4 cup soy sauce
- 2 tablespoons sugar
- 1/4 cup rice vinegar
- 1 cucumber, thinly sliced
- 1 cup pickled carrots and daikon
- 1 jalapeno, thinly sliced
- 1/4 cup cilantro leaves
Instructions
- Preheat a stovetop grill pan over medium-high heat.
- Grill the pork belly slices for 3-4 minutes on each side until cooked through and slightly charred.
- Spread mayonnaise on the inside of each baguette.
- Layer the grilled pork belly, cucumber slices, pickled carrots and daikon, jalapeno slices, and cilantro leaves inside the baguettes.
- Serve the banh mi sandwiches immediately.
