Ingredients

  • 4 mini baguettes
  • 1/2 cup mayonnaise
  • 1 pound pork belly, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 1/4 cup rice vinegar
  • 1 cucumber, thinly sliced
  • 1 cup pickled carrots and daikon
  • 1 jalapeno, thinly sliced
  • 1/4 cup cilantro leaves

Instructions

  1. Preheat a stovetop grill pan over medium-high heat.
  2. Grill the pork belly slices for 3-4 minutes on each side until cooked through and slightly charred.
  3. Spread mayonnaise on the inside of each baguette.
  4. Layer the grilled pork belly, cucumber slices, pickled carrots and daikon, jalapeno slices, and cilantro leaves inside the baguettes.
  5. Serve the banh mi sandwiches immediately.
