Banh Xeo Taco (Bánh xèo)

Bánh xèo, also known as Vietnamese sizzling crepes, is a popular street food in Vietnam. It is a savory pancake filled with a variety of ingredients and typically served with fresh herbs and dipping sauce. In this recipe, we will put a twist on the traditional bánh xèo by turning it into a Banh Xeo Taco!

Banh Xeo Taco (Bánh xèo)

Ingredients

  • 1 cup rice flour
  • 1 1/2 cups coconut milk
  • 1/2 cup water
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/2 lb pork belly, thinly sliced
  • 1/2 lb shrimp, peeled and deveined
  • 1 onion, thinly sliced
  • Bean sprouts
  • Mung bean sprouts
  • Fresh herbs (such as mint, cilantro, and perilla)
  • Lettuce leaves
  • Rice paper
  • Fish sauce
  • Soy sauce
  • Sugar
  • Lime juice
  • Chili peppers

Instructions

  1. In a large bowl, whisk together rice flour, coconut milk, water, turmeric powder, and salt to make the batter. Let it rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and add a bit of oil. Add a few slices of pork belly, shrimp, and onion to one side of the skillet.
  3. Add a ladle of the batter to the skillet, swirling to cover the bottom and the ingredients. Cover and cook for 3-4 minutes until the edges are crispy.
  4. Once the bánh xèo is cooked, fold it in half and transfer to a plate. Repeat with the remaining batter and ingredients.
  5. To assemble the Banh Xeo Tacos, place a piece of lettuce on a rice paper, add some bean sprouts, mung bean sprouts, fresh herbs, and a piece of bánh xèo. Roll it up and serve with the dipping sauce.
