Bania (bunny Chow)
Bania, also known as Bunny Chow, is a popular South African street food that originated in the Indian community of Durban. It consists of a hollowed-out loaf of bread filled with delicious curry.
Ingredients
- 1 large loaf of bread
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400g) chopped tomatoes
- 1 cup vegetable broth
- Salt and pepper to taste
Instructions
- Using a sharp knife, carefully cut the top off the loaf of bread and hollow out the inside, leaving a thick shell. Set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, curry powder, turmeric, cumin, coriander, and paprika. Cook for 1-2 minutes until fragrant.
- Add the chickpeas, chopped tomatoes, and vegetable broth. Season with salt and pepper. Bring to a simmer and cook for 15-20 minutes.
- Spoon the curry mixture into the hollowed-out loaf of bread. Serve hot and enjoy!
