Banja Luka Bean Soup (Banjalučka Pasulj)

Ingredients

  • 1 lb dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 8 cups chicken or vegetable broth
  • 1 smoked ham hock
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the dried white beans and soak them in water overnight.
  2. In a large pot, sauté the chopped onion, diced carrots, and diced celery until they begin to soften.
  3. Add the minced garlic and cook for another minute.
  4. Drain the soaked beans and add them to the pot along with the chicken or vegetable broth, smoked ham hock, and bay leaf.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 2 hours, or until the beans are tender.
  6. Once the beans are cooked, remove the ham hock from the pot and shred the meat, then return it to the soup.
  7. Season the soup with salt and pepper to taste.
  8. Serve the Banjalučka Pasulj hot, garnished with fresh parsley if desired.
