Banku Bonanza is a traditional Ghanaian dish made from fermented corn and cassava dough. It is a staple food in Ghana and is often served with a variety of soups and stews.

Ingredients

  • 2 cups of fermented corn dough
  • 1 cup of cassava dough
  • Water
  • Salt

Instructions

  1. In a large pot, bring 6 cups of water to a boil.
  2. In a bowl, mix the fermented corn dough and cassava dough with enough water to form a smooth, stretchy dough.
  3. Add the dough to the boiling water and stir continuously to prevent lumps from forming.
  4. Cook for 20-25 minutes, stirring constantly, until the mixture thickens and pulls away from the sides of the pot.
  5. Add salt to taste and continue stirring for another 5 minutes.
  6. Remove from heat and allow the banku to cool slightly before shaping it into balls or patties.
