Baobab Leaf Soup (miyan Kuka Delicacy)
Baobab Leaf Soup, also known as Miyan Kuka, is a traditional delicacy in Niger cuisine. This nutritious and flavorful soup is made from dried baobab leaves and is commonly enjoyed with tuwon shinkafa (rice pudding) or tuwo masara (cornmeal pudding).
Ingredients
- 2 cups dried baobab leaves
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 cup peanut butter
- 1 tsp ground crayfish
- 1 tsp chili powder
- 4 cups water
- Salt to taste
Instructions
- Place the dried baobab leaves in a bowl and cover with water. Let it soak for 10 minutes, then drain and rinse the leaves.
- In a large pot, combine the baobab leaves, chopped onion, tomatoes, peanut butter, ground crayfish, chili powder, and water.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
- Season with salt to taste.
- Serve the Baobab Leaf Soup hot with tuwon shinkafa or tuwo masara.
