Baozi (crispy Manchu Dumplings)

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup water
  • 1 cup minced pork
  • 1/2 cup finely chopped cabbage
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, mix the flour and water to form a dough. Knead the dough for 5 minutes, then cover and let it rest for 15 minutes.
  2. In another bowl, combine the minced pork, cabbage, soy sauce, sesame oil, ginger, garlic, and black pepper to make the filling.
  3. Divide the dough into small balls and roll each ball into a thin circle. Place a spoonful of filling in the center of each circle, then fold and pleat the edges to seal the dumplings.
  4. Heat vegetable oil in a pan over medium heat. Place the dumplings in the pan and cook until the bottoms are golden brown and crispy, about 3-4 minutes.
  5. Add water to the pan, cover, and steam the dumplings for 8-10 minutes until the filling is cooked through.
  6. Uncover the pan and continue cooking until all the water has evaporated and the bottoms are crispy again.
  7. Remove the dumplings from the pan and serve hot.
