Barbadian Bajan Macaroni Pie

Ingredients

  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups milk
  • 2 eggs, beaten
  • 1/4 cup butter, melted
  • 1/4 cup all-purpose flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the macaroni according to package instructions, then drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Stir in the flour and cook for 1-2 minutes to make a roux.
  5. Gradually whisk in the milk until smooth and thickened.
  6. Remove the saucepan from the heat and stir in the cheddar and Parmesan cheese until melted and smooth.
  7. Temper the beaten eggs with a small amount of the cheese sauce, then add the tempered eggs to the sauce and mix well.
