Ingredients

  • 1 lb flying fish fillets
  • 1 cup cornmeal

  • 2 cups water
  • 1 cup coconut milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Season the flying fish fillets with salt and pepper.
  2. In a large skillet, heat some oil over medium heat and pan-fry the fish until golden brown on both sides. Remove from the skillet and set aside.
  3. In a separate pot, sauté the onion, bell pepper, and garlic until softened.
  4. Add the okra and continue to cook for a few minutes.
  5. Pour in the water and coconut milk, and bring to a simmer.
  6. Gradually add the cornmeal while stirring constantly to avoid lumps. Cook until the mixture thickens and becomes smooth.
  7. Stir in the butter and season with salt and pepper.
