Ingredients
- 500g beef, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 12 empanada pastry discs
- Oil for frying
Instructions
- In a large skillet, cook the beef over medium heat until browned. Add the onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Stir in the cumin, paprika, salt, and pepper. Remove from heat and let the filling cool.
- Place a spoonful of the filling onto each empanada pastry disc. Fold the pastry over the filling and seal the edges with a fork.
- Heat the oil in a deep pot or fryer to 350°F (175°C). Fry the empanadas in batches until golden brown and crispy.
- Remove the empanadas from the oil and drain on paper towels. Serve hot and enjoy!
