Barbudan Lobster Bisque

Ingredients
- 2 lobster tails, shells removed and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups fish or seafood stock
- 1 cup heavy cream
- 2 tablespoons tomato paste
- 1/4 cup brandy
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped lobster tails and cook until they turn pink, about 5 minutes.
- Add the onion, garlic, carrots, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the fish or seafood stock and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
- Stir in the tomato paste, heavy cream, and brandy. Simmer for an additional 10 minutes.
- Use an immersion blender to puree the bisque until smooth. Season with salt and pepper to taste.
- Serve hot, garnished with a drizzle of heavy cream and chopped parsley if desired.
