Barbudan Lobster Bisque

Ingredients

  • 2 lobster tails, shells removed and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups fish or seafood stock
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 1/4 cup brandy
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped lobster tails and cook until they turn pink, about 5 minutes.
  2. Add the onion, garlic, carrots, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the fish or seafood stock and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes.
  4. Stir in the tomato paste, heavy cream, and brandy. Simmer for an additional 10 minutes.
  5. Use an immersion blender to puree the bisque until smooth. Season with salt and pepper to taste.
  6. Serve hot, garnished with a drizzle of heavy cream and chopped parsley if desired.
