Ingredients
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 4 cups chicken or vegetable broth
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the diced tomatoes, cumin, turmeric, and paprika, and cook for 5 minutes.
- Add the basmati rice to the pot and stir to coat the rice with the tomato and spice mixture.
- Pour in the chicken or vegetable broth and season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
- Fluff the rice with a fork before serving.
