Bariis Maraq (spiced Somali Rice)

Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 4 cups chicken or vegetable broth
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Stir in the diced tomatoes, cumin, turmeric, and paprika, and cook for 5 minutes.
  4. Add the basmati rice to the pot and stir to coat the rice with the tomato and spice mixture.
  5. Pour in the chicken or vegetable broth and season with salt to taste.
  6. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the liquid is absorbed and the rice is tender.
  7. Fluff the rice with a fork before serving.
