Barley and Mushroom Casserole (Griķu un Sēņu Padeve)

Ingredients

  • 2 cups pearl barley
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups mixed mushrooms, sliced
  • 1 cup sour cream
  • 1 cup grated cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the vegetable broth to a boil and add the pearl barley. Reduce heat, cover, and simmer for 30 minutes or until the barley is tender.
  2. Meanwhile, in a skillet, sauté the onion and garlic until softened. Add the mushrooms and cook until they release their liquid and become golden brown.
  3. Preheat the oven to 350°F (175°C).
  4. Once the barley is cooked, combine it with the mushroom mixture, sour cream, and half of the grated cheese. Season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish and sprinkle the remaining cheese on top.
  6. Bake for 30 minutes or until the casserole is bubbly and the cheese is golden brown.
  7. Let it cool for a few minutes before serving.
