Barley and Mushroom Casserole (Griķu un Sēņu Padeve)
This Griķu un Sēņu Padeve, or Barley and Mushroom Casserole, is a traditional dish from Livonian cuisine that is hearty and comforting. It's perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 cups pearl barley
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups mixed mushrooms, sliced
- 1 cup sour cream
- 1 cup grated cheese
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a boil and add the pearl barley. Reduce heat, cover, and simmer for 30 minutes or until the barley is tender.
- Meanwhile, in a skillet, sauté the onion and garlic until softened. Add the mushrooms and cook until they release their liquid and become golden brown.
- Preheat the oven to 350°F (175°C).
- Once the barley is cooked, combine it with the mushroom mixture, sour cream, and half of the grated cheese. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish and sprinkle the remaining cheese on top.
- Bake for 30 minutes or until the casserole is bubbly and the cheese is golden brown.
- Let it cool for a few minutes before serving.
