Barley and Mushroom Soup (Kruķu un sēņu zupa)
This Kruķu un sēņu zupa, or Barley and Mushroom Soup, is a traditional Latvian dish that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 1 cup barley
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 lb mushrooms, sliced
- 6 cups vegetable broth
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.
- Stir in the barley, vegetable broth, and bay leaves. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the barley is tender.
- Season with salt and pepper to taste.
- Remove the bay leaves and serve the soup hot, garnished with fresh parsley.
