Barley and Mushroom Soup (Kruķu un sēņu zupa)

Ingredients

  • 1 cup barley
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 lb mushrooms, sliced
  • 6 cups vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the mushrooms and cook until they release their liquid and start to brown.
  3. Stir in the barley, vegetable broth, and bay leaves. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the barley is tender.
  4. Season with salt and pepper to taste.
  5. Remove the bay leaves and serve the soup hot, garnished with fresh parsley.
