Barley and Vegetable Stew (Ječmena Kaša)
Ječmena Kaša is a traditional Montenegrin stew made with barley and a variety of vegetables. It's a hearty and nutritious dish that is perfect for a comforting meal, especially during the colder months.
Ingredients
- 1 cup barley
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the diced carrots and potatoes to the pot, and cook for 5 minutes.
- Stir in the barley, paprika, and thyme, and cook for another 2 minutes.
- Pour in the vegetable broth and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the barley and vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Ječmena Kaša hot, and enjoy!
