Ingredients

  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, cubed
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chopped onion and diced carrots, and cook until softened.
  3. Add the pearl barley and vegetable broth to the pot.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
  5. Add the cubed potatoes to the pot and continue to simmer for another 20-30 minutes, or until the barley and potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
