Barley Bounty (Ячневый суп)
Ячневый суп (Barley Bounty) is a traditional Belarusian soup that is hearty, nutritious, and perfect for the colder months.
Ingredients
- 1 cup pearl barley
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, cubed
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the chopped onion and diced carrots, and cook until softened.
- Add the pearl barley and vegetable broth to the pot.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.
- Add the cubed potatoes to the pot and continue to simmer for another 20-30 minutes, or until the barley and potatoes are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
