Ingredients

  • 2 cups barley flour
  • 1 cup all-purpose flour
  • 1 packet active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 1 1/4 cups warm water
  • 1 tablespoon olive oil

Instructions

  1. In a large bowl, combine the barley flour, all-purpose flour, yeast, and salt.
  2. In a separate bowl, mix the honey and warm water until the honey is dissolved.
  3. Pour the honey water and olive oil into the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes, or until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour.
  6. Punch down the dough and shape it into a loaf. Place the loaf in a greased bread pan, cover, and let it rise for another 30 minutes.
  7. Preheat the oven to 375°F (190°C) and bake the bread for 35-40 minutes, or until it sounds hollow when tapped on the bottom.
  8. Let the bread cool before slicing and serving.
