Barley Vegetable Soup (Ячневый суп с овощами)

Ingredients

  • 1 cup pearl barley
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add the pearl barley, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the barley is tender.
