Ingredients
- 1 cup pearl barley
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the pearl barley, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat to low and simmer for 45-50 minutes, or until the barley is tender.
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
