Barszcz (polish Barszcz Surprise)
Barszcz is a traditional Polish beet soup that is popular in Central European cuisine. This recipe adds a surprise twist to the classic dish, making it a flavorful and comforting meal.
Ingredients
- 4 medium beets, peeled and grated
- 1 onion, finely chopped
- 4 cups vegetable broth
- 2 tablespoons apple cider vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 cup sour cream
- Fresh dill for garnish
Instructions
- In a large pot, combine the grated beets, chopped onion, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Stir in the apple cider vinegar, sugar, salt, and pepper. Simmer for an additional 15 minutes.
- Remove the soup from heat and let it cool slightly. Then, stir in the sour cream until well combined.
- Serve the barszcz hot, garnished with fresh dill.
