Ingredients

  • 4 medium beets, peeled and grated
  • 1 onion, finely chopped
  • 4 cups vegetable broth
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 cup sour cream
  • Fresh dill for garnish

Instructions

  1. In a large pot, combine the grated beets, chopped onion, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  2. Stir in the apple cider vinegar, sugar, salt, and pepper. Simmer for an additional 15 minutes.
  3. Remove the soup from heat and let it cool slightly. Then, stir in the sour cream until well combined.
  4. Serve the barszcz hot, garnished with fresh dill.
