Ingredients

  • 4 large onions
  • 1 cup of rice
  • 250g ground lamb
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the onions and carefully remove the inner layers, leaving the outer layers intact to create a shell.
  3. In a bowl, mix the rice, ground lamb, cumin, coriander, cinnamon, salt, and pepper.
  4. Stuff the onion shells with the rice and lamb mixture.
  5. Place the stuffed onions in a deep pot, drizzle with olive oil, and pour the broth over them.
  6. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the onions are tender and the rice is cooked.
  7. Serve the Basal Mahshi hot and enjoy!
