Basbousa (fragrant Rosewater And Almond Cake)
Basbousa is a delicious Middle Eastern dessert made with semolina, coconut, and yogurt, soaked in a fragrant rosewater syrup. This moist and aromatic cake is perfect for satisfying your sweet cravings.
Ingredients
- 1 1/2 cups semolina
- 1 cup desiccated coconut
- 1 cup plain yogurt
- 1/2 cup sugar
- 1/2 cup melted butter
- 1/4 cup slivered almonds
- 1 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1/4 cup rosewater
- 1/4 cup water
- 1 cup sugar for the syrup
Instructions
- Preheat the oven to 180°C (350°F) and grease a 9x13 inch baking dish.
- In a large bowl, mix together the semolina, desiccated coconut, sugar, yogurt, melted butter, slivered almonds, baking powder, and vanilla extract until well combined.
- Transfer the mixture to the prepared baking dish and smooth the top with a spatula.
- Using a sharp knife, score the mixture into diamond or square shapes, and place an almond in the center of each piece.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- While the basbousa is baking, prepare the syrup by combining the rosewater, water, and sugar in a saucepan over medium heat. Stir until the sugar is dissolved, then bring to a simmer and cook for 5 minutes.
- When the basbousa is done, remove it from the oven and immediately pour the hot syrup over the hot basbousa, ensuring that it is evenly distributed.
- Allow the basbousa to cool and absorb the syrup before serving.
