Basbousa (fragrant Rosewater And Almond Cake)

Ingredients

  • 1 1/2 cups semolina
  • 1 cup desiccated coconut
  • 1 cup plain yogurt
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 1/4 cup slivered almonds
  • 1 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 1/4 cup rosewater
  • 1/4 cup water
  • 1 cup sugar for the syrup

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the semolina, desiccated coconut, sugar, yogurt, melted butter, slivered almonds, baking powder, and vanilla extract until well combined.
  3. Transfer the mixture to the prepared baking dish and smooth the top with a spatula.
  4. Using a sharp knife, score the mixture into diamond or square shapes, and place an almond in the center of each piece.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  6. While the basbousa is baking, prepare the syrup by combining the rosewater, water, and sugar in a saucepan over medium heat. Stir until the sugar is dissolved, then bring to a simmer and cook for 5 minutes.
  7. When the basbousa is done, remove it from the oven and immediately pour the hot syrup over the hot basbousa, ensuring that it is evenly distributed.
  8. Allow the basbousa to cool and absorb the syrup before serving.
