Ingredients

  • 1 1/2 cups semolina
  • 1 cup plain yogurt
  • 1/2 cup desiccated coconut
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 1/4 cup orange juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • 1/4 cup sliced almonds for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a large bowl, mix together the semolina, yogurt, coconut, sugar, melted butter, orange juice, baking powder, and vanilla extract until well combined.
  3. Transfer the mixture to the prepared baking dish and smooth the top with a spatula. Score the surface into diamond or square shapes with a knife and place an almond slice in the center of each piece.
  4. Bake in the preheated oven for 30 minutes, or until the top is golden brown.
  5. While the basbousa is baking, prepare the orange blossom syrup.
  6. Remove the basbousa from the oven and immediately pour the syrup over the hot cake, allowing it to soak in.
  7. Let the basbousa cool before cutting and serving.
