Basbousa (moroccan Orange Blossom Semolina Cake)
Basbousa is a popular Moroccan dessert made with semolina, yogurt, and coconut, soaked in a fragrant orange blossom syrup. This moist and aromatic cake is perfect for serving with tea or coffee.
Ingredients
- 1 1/2 cups semolina
- 1 cup plain yogurt
- 1/2 cup desiccated coconut
- 1/2 cup sugar
- 1/2 cup melted butter
- 1/4 cup orange juice
- 1 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 1/4 cup sliced almonds for garnish
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
- In a large bowl, mix together the semolina, yogurt, coconut, sugar, melted butter, orange juice, baking powder, and vanilla extract until well combined.
- Transfer the mixture to the prepared baking dish and smooth the top with a spatula. Score the surface into diamond or square shapes with a knife and place an almond slice in the center of each piece.
- Bake in the preheated oven for 30 minutes, or until the top is golden brown.
- While the basbousa is baking, prepare the orange blossom syrup.
- Remove the basbousa from the oven and immediately pour the syrup over the hot cake, allowing it to soak in.
- Let the basbousa cool before cutting and serving.
