Ingredients

  • 1 1/2 cups semolina
  • 1 cup desiccated coconut
  • 1 cup sugar
  • 1/2 cup plain yogurt
  • 1/2 cup vegetable oil
  • 1/4 cup orange juice
  • 1/4 cup chopped pistachios
  • 1 teaspoon baking powder
  • 1 teaspoon orange blossom water
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 9x9 inch baking dish.
  2. In a large bowl, mix together the semolina, desiccated coconut, sugar, yogurt, vegetable oil, orange juice, baking powder, orange blossom water, vanilla extract, and salt until well combined.
  3. Pour the mixture into the prepared baking dish and spread it out evenly. Use a knife to score the mixture into diamond or square shapes.
  4. Place a pistachio in the center of each scored shape.
  5. Bake in the preheated oven for 25-30 minutes, or until the basbousa is golden brown on top.
