Ingredients
- 1 1/2 cups semolina
- 1 cup desiccated coconut
- 1 cup sugar
- 1/2 cup plain yogurt
- 1/2 cup vegetable oil
- 1/4 cup orange juice
- 1/4 cup chopped pistachios
- 1 teaspoon baking powder
- 1 teaspoon orange blossom water
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and grease a 9x9 inch baking dish.
- In a large bowl, mix together the semolina, desiccated coconut, sugar, yogurt, vegetable oil, orange juice, baking powder, orange blossom water, vanilla extract, and salt until well combined.
- Pour the mixture into the prepared baking dish and spread it out evenly. Use a knife to score the mixture into diamond or square shapes.
- Place a pistachio in the center of each scored shape.
- Bake in the preheated oven for 25-30 minutes, or until the basbousa is golden brown on top.
